Almond Coconut Pancakes

Low carb pancakes. GLUTEN FREE.

Ingredients:

MIX:

4 eggs

1-1/4 c. almond milk

2 T. vanilla

2/3 c. almond flour

1/3 c. gluten free pancake mix

1/3 c. coconut flakes (floured or shredded)

1 T. flax seed (ground)

1 c. fresh berries (or frozen berries, thawed)

Grease skillet with butter and cook. Makes 8 pancakes

Top with butter and maple syrup, or plain greek yogurt and fruit jam.
